Shrimp Pesto Zoodles

Awhile back, I started giving up most carbs so was excited to be turned on to zoodles as a low-calorie alternative (inspired by Healthy with Nedi). I love this recipe because it is super low maintenance and really delicious.


Serves 1-2


  • Extra virgin olive oil
  • 2 cloves of garlic
  • Squash zoodles (I buy mine pre-zoodled at Publix or Whole Foods)
  • Frozen peeled shrimp
  • Pesto (again, I buy this pre-made, but if you want to make your own it will probably elevate the recipe)
  • 5 cherry tomatoes


  • Chop the garlic
  • Rinse, strain and dry the zoodles
  • Heat pan on medium heat, add 2 tbsp olive oil and chopped garlic
  • Add zoodles and saute until they begin to change texture
  • In a separate pan on medium heat sauté the shrimp in 2 tbsp of olive oil until fully cooked
  • Add shrimp to the zoodle pan and cook for a couple more minutes
  • Spoon in 2 tbsp of pesto sauce and mix together
  • Top with cherry tomatoes
  • Devour
