Healthy Recipe Inspo - August 13, 2019

It’s that time again, I hungrily scoured instagram for some new delicious recipe inspo to help keep it fun to eat healthfully. Make sure to follow @jensbowl, @annekaeats, @nocrumbsleft, @tasteslovely and @realfoodwithjessica for more healthy recipe inspiration.

Here’s a perfect dish for midsummer called Patrick’s Vegan Feast in celebration of @nocrumbslefts_otherkid. There are many varieties of lovely mushrooms to enjoy this time of year, but whenever I can eat trumpet mushrooms, you can bet that I do! First I sauté blanched sugar snap peas with tiny bits of yellow peppers and set aside. I’ve taken it over the top by sautéing chopped broccolini with slivers of garlic and olive oil, setting aside the other vegetables, and then returning them to the pan with the cross cut kale, olive oil, and chopped garlic…more of an inspiration than it is a recipe, because you can make it so many different ways depending on what’s local and in season. This would be lovely with spinach, yellow zucchini, red Swiss chard, and shiitake mushrooms. Of course I’ve topped it off here with Marinated Onions. For the exact details, check the recipe in the book, but I will do this on the stories soon. In the book I serve this with my Cashew Crema and Gomasio. If you’ve never made the crema, start with raw cashews and soak for at least a couple of hours. Drain, rinse, and then purée with a bit of water. It takes several minutes to get a beautiful crema, and you can change it up with different herbs—so many ways to flavor it.
