idk about you, but i am 100% an over thinker. from the clothes i decide to wear to the meals i decide to make for dinner, i have found that sometimes the smallest decisions can add a lot of stress to my day for no reason. i guess it boils down to me always trying to be a perfectionist and having a type-a personality, which while it can be a good thing (sometimes), it deffffinitely can be annoying AF too. anyone else type-a and can relate? 🤦🏻‍♀️ . the one negative impact it has had for me and this platform is my struggle to constantly overthink the content i post on here, especially lately. is it going to add enough value to someone’s life? is the photo appealing? will someone actually use the recipe or do the workout? are people even enjoying this account? it’s can be hard to feel empowered when there are so many other people out there doing the same thing. . it has been finding the constant reminder that no one is perfect, mistakes are normal, and no one probably even notices the little things that i (you) do. and that everyone has something unique to offer! and if i (you) get joy out of doing what you’re doing, then so be it. the right people will stay and the uninterested will leave. achieving health and wellness can be challenging enough, no need to overthink it 💕 just #keepitreal. . . so here’s to not overthinking so much and sharing my dinner from the other night that was simple & in no way glamorous yet so delicious👇🏻 . ✨ sautéed wild-caught @traderjoes shrimp over a bed of cauliflower rice ✨ tomato & avocado 🥑 salad tossed with salt + pepper and @kouzinifoods olive oil ✨ roasted frozen colored carrots from @traderjoes with fresh sautéed zucchini . happy tuesday! . . . . . . . . . . #healthandkellness #cleaneating #cleaneats #onedayatatime #dontoverthink #keepitreal #simple #healthyfood #simplerecipes #groceryshopping #healthylifestyle #wellness #foodfreedom #eatwhatyoulove #healthcoach #paleo #keto #education #blogger #personaltrainer #smyrna #atlanta #selfcare #intuitiveeating

This cauliflower pesto ‘risotto’ recipe really came together! Grab the recipe below, it’s #grainfree and #vegan and takes 20-25mins! I topped mine with wild salmon flakes 👇🏻👇🏻👇🏻Bookmark this post to save the recipe! Serves: 4 Time: 20-25m INGREDIENTS One large (or two small cauliflower heads), cut into florets 2 cuts basil, loosely packed 2-3 cloves garlic, roughly chopped Juice of 1 lemon 3-4 tbs nutritional yeast (for vegan cheesy flavor) 1/4 cup pine nuts (optional - toasted pine nuts for more flavor) 1/4 cup olive oil 2 generous pinches sea salt Fresh herbs and veggies to top (I used fresh cherry tomatoes, scallions, and leftover roasted asparagus) OPTIONAL INGREDIENTS 1-3 tbs warm water to thin pesto, may not be needed Additional seasoning (I used @nomnompaleo magic mushroom powder when I added cauliflower to food processor for a umami kick and red chili flakes to top) TO MAKE Place cauliflower florets in a medium stock pot in a steaming basket filed 1/8th the way with water. Steam cauliflower until soft and fork tender, about 15 mins Meanwhile, in a food processor (I used the ninja food processing attachment), add pesto ingredients: basil, garlic, lemon, nutritional yeast, pine nuts, olive oil, salt, and blend until well combined and smooth. Taste and adjust seasoning. You maybe need to add warm water 1 tbs at a time to thin. Once pesto tastes to you liking, remove steamed cauliflower from steamer and add to food processor on top of the pesto. Use rubber spatula to mix the cauliflower and pesto together somewhat. Give the mixture 3-5 pulses in the food processor until cauliflower becomes ‘ricey’ texture. This will happy very quickly! Be careful not to over blend or cauliflower will become a mash. Transfer mixture to a medium bowl and mix until pesto and riced cauliflower are well combined. Add any additional seasoning or fresh herbs/veggies. I like to top mine with chili flakes and extra nutritional yeast flakes. I also recommend adding a protein! Enjoy !!!! #whatsonmyplate #plantbased #feedyoursoull
